Voi Vignes
Greece
VOI Vignes is the new project of the talented, young, Greek vigneron, Jason Ligas. It is based on the foothills of Olympus mountain in the Rapsani appellation. Since 2023, Jason and his team vinify their grapes in their newly refurbished old stone build primary school of Krania village. They cultivate 8,5 ha of the three indigenous grape varieties of Xinomavro, Stavroto and Krassato, planted on gobelet (70% uncrafted vine). These old vines are farmed based on the principles of biodynamic and permacultura, producing around 10.000 bottles.
In the winery, vinification takes place with the native yeasts of the grapes, with no filtration, clarification or addition of sulphites.
Voi - Hymnos (dry white) blanc de noir of Xinomavro, Stavroto & Krassato grapes, of 60-80 years old vines planted on granite/schist soil. Aged in old french barrels, no sulfites unfiltered.
