Marnes Blanches
France
Pauline and Géraud’s families are natives of the steep hill mountains of Jura. Domaine des Marnes Blanches was founded when the couple returned to the region in 2006.
They farm 12ha organically, spread across four villages in the Sud-Revermont. Cesancey, Gevingey, Vincelles and Ste-Agnès. Especially, their land in Cesancey is characterized from the white marl after which the domaine is named.
Their winery is located off the main road in Ste-Agnès where they vinify and age every parcel separately. Of course, wild yeast fermentation - whites are fermented in stainless steel and aged in old barrels (228 & 500lt), reds pass through 'semi-carbonic' maceration with whole bunches in fibreglass then aged in wooden foudres. Sulphur is used sparsely for the whites (added once following soutirage pre-bottling – total around 25mg/l), and not at all for the reds.
The vines are up to 100 years old and interesting local strains such as Melon-Queue-Rouge and Savagnin Muscaté exist in their lieu-dits. The Fromonts make a variety of cuvees ranging from ouillé whites, to sous-voile whites, to Crémants white and rosé, single variety reds, and a delicious vin de paille.
